When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Simmer the beans until very soft, about an hour. Drain, keeping a little water.
- Blend them with the garlic, salt and half the oil until fluffy, adding cooking water as needed.
- Fry the onions in the rest of the oil until golden, then stir in tomato paste and paprika.
- Spread the beans on a plate and pour the onions over the top.
Tip. Romania’s Christmas Eve and Lenten classic, eaten with bread and pickles.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
