Wine & oil daysPrep 50 minCook 20 minServes 20Plus 1 hour rising
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Knead the dough and let it rise an hour.
  2. Mix the spinach, onions, sumac, lemon, oil, salt and pepper.
  3. Roll the dough thin, cut 10 cm (4 inch) circles, put a spoonful of filling on each and pinch three sides together into a triangle.
  4. Bake at 220°C (425°F) for 15 to 20 minutes until golden.

Tip. Squeeze the spinach really well, or the triangles open in the oven.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
