Bread salad with sumac

Wine & oil daysPrep 20 minCook 10 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Whisk the dressing ingredients together.
  2. Toss the vegetables and herbs in a large bowl.
  3. Add the dressing and toss again.
  4. Add the toasted pita just before serving so it stays crisp. Sprinkle with more sumac.

Tip. A Lenten favourite in Antiochian parishes. Check the pita is made without milk.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
