Horta Vrasta

Χόρτα βραστά

Boiled wild greens with lemon

Any fast dayPrep 10 minCook 15 minServes 4
When to eat it. No oil, wine or fish, so it fits even the strict weekdays of Lent.

Ingredients

Method

  1. Wash the greens well in several changes of water.
  2. Boil in plenty of salted water until tender: 5 minutes for spinach and chard, 10 to 15 for tougher wild greens.
  3. Drain well and let them steam dry.
  4. Dress with plenty of lemon and salt. Add olive oil only on oil days.

Tip. The simplest Lenten dish there is, and one of the healthiest. Keep the cooking water: Greek grandmothers drink it with lemon.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
