When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Make the syrup and let it cool.
  2. Whisk the juice, zest, sugar, oil and baking powder.
  3. Fold in the dried filo pieces until soaked. Spread in an oiled tin.
  4. Bake at 180°C (350°F) for 40 to 45 minutes, then pour the cool syrup over at once.

Tip. The usual recipe uses yogurt and eggs. Extra juice and oil replace both.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
