When to eat it. Has fish, so keep it for fish days: the Annunciation, Palm Sunday, and Tuesdays, Thursdays and weekends in much of the Nativity Fast.

Ingredients

Method

  1. Lay the sardines in a baking dish in one layer.
  2. Tuck the tomato slices and garlic between them.
  3. Whisk the oil, lemon, oregano, salt and pepper and pour over.
  4. Bake at 200°C (400°F) for 20 to 25 minutes. Finish with parsley.

Tip. Cheap, quick and full of good fats for a fish day.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
