When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Fry the onions and pepper in the oil.
  2. Add the paprika and tomato paste, then the potatoes, bay and thyme.
  3. Cover with water and simmer 25 minutes until the potatoes are soft and the sauce thick.
  4. Season and add parsley. Serve with pickles.

Tip. Cheap, warming and exactly what a Romanian monastery serves.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
