When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Knead the dough and let it rise an hour.
  2. Stretch into two thin rounds on oiled trays.
  3. Spread the passata and add the vegetables. Drizzle with oil.
  4. Bake at the oven’s hottest setting, about 250°C (480°F), for 10 to 12 minutes.

Tip. Kids love building their own. Shrimp make it feel like a treat.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
