When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Knead into a soft dough and let it rise an hour.
  2. Divide into 8 balls and roll each 3 mm (⅛ inch) thick.
  3. Cook in a very hot dry pan 1 minute per side until puffed and spotted, or bake at 250°C (480°F) for 4 minutes.
  4. Stack under a towel to keep them soft.

Tip. Many shop-bought pitas contain milk or yogurt. These don’t.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
