When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Keep fresh artichoke hearts in water with half the lemon juice so they don’t darken.
- Soften the spring onions in the oil, then add potatoes and carrots.
- Lay the artichokes on top, add 400 ml (1⅔ cups) of water, salt and pepper. Cover and simmer 30 minutes.
- Whisk the flour into the remaining lemon juice with a ladle of the liquid, pour back in, shake the pan and simmer 5 minutes. Add the dill.
Tip. A spring dish from the Greeks of Constantinople, perfect for the end of Lent.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
