Lentils and rice, the Greek way

Wine & oil daysPrep 10 minCook 45 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Boil the lentils 5 minutes and drain.
  2. Simmer them in 1.2 litres (5 cups) fresh water with the onion, garlic and bay leaf for 20 minutes.
  3. Add the rice, tomato paste and oil and simmer 15 to 18 minutes until thick.
  4. Season and serve with a splash of vinegar.

Tip. Thicker than fakes, closer to a risotto.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
