Wine & oil daysPrep 10 minCook 40 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Soften the onions in the oil.
  2. Add potatoes, carrots and tomato paste and stir for a minute.
  3. Add the peas and 300 ml (1¼ cups) of water. Season.
  4. Cover and simmer 30 to 35 minutes, until the potatoes are tender. Stir in the dill.

Tip. Frozen peas work perfectly and cook a little faster.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
