Ντολμαδάκια γιαλαντζί

Vine leaves rolled with rice and herbs

Wine & oil daysPrep 1 hCook 50 minServes 6
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Soften the onions in half the oil, add the rice for a minute, then take off the heat and stir in the herbs, half the lemon, salt and pepper.
  2. Lay a leaf shiny side down, put a teaspoon of filling at the stem end, fold in the sides and roll tightly.
  3. Line a pot with torn leaves and pack the rolls in snugly, seam side down. Pour over the remaining oil and lemon and enough water to just cover.
  4. Weigh down with a plate and simmer on low for 45 to 50 minutes. Cool in the pot.

Tip. “Yalantzi” means “false”: the fasting version, with no meat.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
