Octopus in vinegar and oil

Wine & oil daysPrep 15 minCook 1 hServes 4Plus a day marinating
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Put the octopus in a pot with the bay leaf and no water. Cover and cook on low; it releases its own liquid. Simmer 45 to 60 minutes until a knife slides in easily.
  2. Cool, then cut into bite-sized pieces.
  3. Mix the vinegar, oil, garlic, oregano and pepper and pour over the octopus in a jar.
  4. Marinate in the fridge for at least a day. Keeps a week.

Tip. Octopus is not counted as fish, so it is traditional through Lent. Without the oil it fits strict days too.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
