When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Salt the zucchini, leave 20 minutes, then squeeze out all the water.
  2. Mix with the onion, herbs, flour, baking powder and pepper into a thick batter.
  3. Drop spoonfuls into hot oil and flatten.
  4. Fry until golden on both sides. Serve with lemon.

Tip. Squeezing out the water is what keeps them crisp.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
