Wine & oil daysPrep 20 minCook 20 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Grate the potatoes and onion finely and squeeze out the liquid. Let the liquid settle, pour off the water and keep the starch at the bottom.
  2. Mix the potatoes with the starch, flour, salt and pepper.
  3. Fry spoonfuls in hot oil, flattening them, 3 to 4 minutes per side.
  4. Drain and serve hot.

Tip. The potato starch holds them together, so no egg is needed.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
