Fried squid

Wine & oil daysPrep 20 minCook 15 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Pat the squid completely dry. This is the secret to crisp rings.
  2. Toss in the flour mixed with salt and pepper and shake off the excess.
  3. Fry in small batches in oil at 180°C (350°F) for 1 to 2 minutes, just until golden. Longer makes them rubbery.
  4. Drain, salt and serve at once with lemon.

Tip. A Lenten favourite in tavernas, since squid isn’t counted as fish.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
