When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Soften the onion and tentacles in half the oil. Stir in the rice and herbs, season and cook 3 minutes.
  2. Fill the squid halfway (the rice swells) and close with toothpicks.
  3. Lay them in a dish, pour over the tomatoes, wine, the rest of the oil and 100 ml (scant ½ cup) water.
  4. Cover and bake at 180°C (350°F) for 45 to 50 minutes.

Tip. A Lenten feast dish from the islands.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
