Cypriot taro stewed with celery and tomato
Wine & oil daysPrep 20 minCook 1 hServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Don’t wash the taro after peeling. Wipe it dry and break it into chunks by snapping, not cutting, so it doesn’t go slimy.
- Brown the chunks in the oil, then add the onion and celery.
- Add the tomatoes and water to cover. Simmer 45 to 60 minutes until tender.
- Season and add lemon.
Tip. The Cypriot Lenten version leaves out the usual pork.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
