Cypriot stuffed vine leaves with tomato

Wine & oil daysPrep 1 hCook 50 minServes 6
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Mix the rice, onions, tomatoes, herbs, cinnamon, half the oil, salt and pepper.
  2. Roll a spoonful in each leaf, folding in the sides.
  3. Pack them tightly in a pot lined with torn leaves, pour over the rest of the oil, the lemon and water to just cover.
  4. Weigh down with a plate and simmer 45 to 50 minutes.

Tip. The Cypriot version uses tomato and cinnamon in the filling.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
