Wine & oil daysPrep 10 minCook 25 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Brown the mushrooms in half the oil over high heat. Set aside.
  2. Soften the onion and garlic in the rest of the oil, add the orzo and stir for 2 minutes.
  3. Add the wine, then the stock a ladle at a time, stirring, for about 15 minutes until creamy.
  4. Stir the mushrooms back in with thyme and parsley and season.

Tip. Check that the orzo is egg-free; most dried orzo is just wheat and water.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
