When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Mix the flour, yeast, sugar, salt, water and oil and knead for 10 minutes until smooth. Cover and let it rise for 1 hour.
  2. Press it into a long oval about 2 cm (¾ inch) thick on a floured tray. Rise again for 45 minutes.
  3. Press your fingertips deep into the dough all over, brush with water and scatter the sesame.
  4. Bake at 200°C (400°F) for 20 to 25 minutes until golden.

Tip. Baked only for Clean Monday, the first day of Great Lent, and eaten outdoors with tarama, halva and olives while flying kites.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
