When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Core the cabbage and boil it whole, peeling off the leaves as they soften.
- Mix the rice, onions, herbs, half the oil, salt and pepper.
- Roll a spoonful in each leaf and pack tightly into a pot. Add the rest of the oil and water to cover, weigh down with a plate and simmer 45 minutes.
- Whisk the cornstarch with the lemon and a ladle of broth, pour it in and shake the pot to thicken.
Tip. The lemon-cornstarch sauce stands in for the egg-lemon avgolemono.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
