Wine & oil daysPrep 10 minCook 35 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. No soaking needed: boil the peas in plenty of water for 5 minutes, drain, then simmer in fresh water 25 to 30 minutes until just tender.
  2. Drain and cool slightly.
  3. Whisk the oil, lemon, mustard, salt and pepper.
  4. Toss everything together and rest 20 minutes before serving.

Tip. Good warm or cold, and it keeps three days for packed lunches.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
