Spinach rice with dill and lemon
Wine & oil daysPrep 15 minCook 30 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Soften the onions in the olive oil for 5 minutes.
- Stir in the rice for a minute, then the tomato paste if using.
- Add the spinach in handfuls, letting each wilt. Pour in the hot water, add dill and season.
- Cover and simmer on low for 18 to 20 minutes, until the rice is tender. Rest 5 minutes and serve with lemon.
Tip. It should be loose and juicy. Add a little water if it sets too firm.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
