Beet, potato and pickle salad

Wine & oil daysPrep 20 minCook 50 minServes 6
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Boil or roast the beets, potatoes and carrots in their skins until tender. Cool and peel.
  2. Dice everything into small, even cubes.
  3. Toss the beets with a little of the oil first so they don’t stain everything pink.
  4. Combine with the rest of the vegetables, oil, salt and pepper.

Tip. A fixture of every Russian Lenten table.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
